So I am not one to post my recipes, but my friend Laura wanted this muffin recipes, so I thought I would Share this one. Let me Just say this is not My recipes I got it from my Mother-in-Law, but it is still really good and healthy!
1. Put 4 cups of All Bran Original cereal in a small bowl and Pour 2 cups of Boiling Water over top. Set aside and let cool.
2. cream together in a Large Bowl
1 cup of regular sugar
1 cup of Brown sugar
1 cup of Vegetable oil
4 eggs
1 tsp Vanilla or almond extract
3. Sift together in a Medium bowl
5 cups of Flour ( you can use All purpose, or I use 50/50 of whole wheat and all purpose)
1 tsp salt
5 tsp Baking soda
2 cups of Bran Flakes (you can use raisin bran cereal, or just Plain Bran flakes)
4. Add 4 cups of Buttermilk alternately with flour Mixture to eggs and sugar bowl.
5. Stir in the cooled Bran and 2 cups of chopped fruit (optional)*. store covered in your fridge.
Bake 350 degrees in greased or paper lined tins
Mini muffins 9-12 minutes
Regular 18-21 minutes
Yields approx 4 dozen regular muffins
This Recipe as you can see makes a Lot of batter, but the beauty of it is, you don't have to make it all at once. you can make a dozen at a time and enjoy fresh muffins for up to 2 weeks.
* We prefer Blueberries in our muffins, but you can try whatever you want (dried fruit, i.e. raisins, work fine). My husband has told me that I am not supposed to put prunes in them though (bad memories).
